Simple Slimming Suppers!- Monday 23rd March 2015!




Hello everyone! Welcome to this weeks Simple Slimming Suppers!


Firstly, as always, I will update you on my weight loss this week. As you may know if you read last weeks blog post, I decided to try a mainly vegetarian diet to see if it would speed up my weight loss. I spent the week eating mainly Quorn and veggies. Now, I weighed myself this morning and I have lost 2lbs, about the same as usual. I do have to say I wont be carrying on the veggie diet, not because I didn't like the food, but because it just didn't agree with me. I have never mentioned it on here before because I didn't feel like it was necessary but I suffer quite badly from IBS. Certain foods trigger it and make it worse therefore making me feel very unwell. I have been terrible this week and put it down to the change in diet. After doing some research online (good old Google), I discovered that Quorn seems to disagree with lots of peoples stomachs. I don't feel like it is worth feeling so poorly when it didn't even make any difference to my weight loss, so I have decided to go back to what I am used to and keep plodding along :).


Now, for this weeks Simple Slimming Suppers we have decided to do something a bit different again. Since being on Slimming World I have had lots of people saying they would love to try it but healthy food is too expensive. So this week we thought we would look into how much more it is per week to eat healthily compared to eating junk food.


I made a weekly meal plan that consisted of meals that can be made both unhealthily and Slimming World style. Then, we did both a junk food shop and a Slimming World shop with the four major supermarkets. These supermarkets were Asda, Tesco, Sainsburys and Morrisons.


So here is the weekly meal plan and a list of what you would need to make the meals both ways, we worked as a family of 4-


Monday- Spaghetti Bolognese
Unhealthy version- full fat beef mince, jar of full fat spag bol sauce, 1 onion, spaghetti, oil.
Slimming World version- lean beef mince, 1 onion, 1 punnet of mushrooms, fresh garlic, dried chilli, dried cinnamon, dried mixed herbs, balsamic vinegar, 2 tins chopped toms, passata, spaghetti, fry light.


Tuesday- Southern Fried Chicken with Chips and Coleslaw
Unhealthy version- ready made southern fried chicken breasts, frozen chips, ready made coleslaw.
Slimming World version- 4 fresh chicken breasts, wholemeal bread, dried oregano, dried ginger, dried paprika, eggs, bag of potatoes, cabbage, carrots, red onion, light mayo, fat free natural yogurt.


Wednesday- Sweet and Sour Pork with Rice
Unhealthy version- full fat diced pork, full fat jar of sweet and sour sauce, rice.
Slimming World version- lean diced pork, onion, red pepper, carrots (already added to basket), sugar snap peas, Chinese 5 spice, fresh garlic (added), cornflour, white wine vinegar, tomato puree, light soy sauce, fresh pineapple, rice.


Thursday- Chilli Con Carne
Unhealthy version- full fat beef mince, 1 onion, 1 tin kidney beans, 2 tins chopped toms, 1 packet of chilli con carne mix (its shocking how high in cals these can be!), rice.
Slimming World version- lean beef mince, 1 onion, punnet of mushrooms, yellow pepper, green pepper, fresh garlic (added), beef stock cubes, tin chopped toms, passata, tin kidney beans in chilli sauce, dried cumin, dried cinnamon (added), dried smoked paprika, dried cayenne pepper, dried coriander, granulated sweetener, rice.


Friday- Fish, Chips and Mushy Peas
Unhealthy version- 4 pieces of frozen battered or breaded fish, oven chips, 2 tins mushy peas.
Slimming World version- 4 pieces fresh cod, dried breadcrumbs, egg (added), bag of potatoes, 2 tins mushy peas.


Saturday- Chicken Tikka Masala and Rice
Unhealthy version- diced chicken, full fat jar of tikka masala sauce, rice.
Slimming World version- diced chicken, 1 lime, 1 onion, fat free natural yogurt, tikka curry powder, fresh garlic (added), fresh ginger, dried chilli (added), passata, dried cinnamon (added), cumin (added), fresh coriander, tomato puree, rice.


Sunday- Cottage Pie and Veg
Unhealthy version- ready made cottage pie, frozen veg.
Slimming World Version- lean beef mince, 1 onion, fresh garlic (added), kale, tin chopped tomatoes, passata, lea and perrins sauce, bag of potatoes, skimmed milk, frozen veg.


So this is what we found..

The first place we shopped was Asda and here's what we found..





Cost of unhealthy shop= £48.33





Cost of Slimming World shop= £76.22


This means it would cost you an extra £27.89 a week to eat healthily if you were shopping in Asda!







The second place we shopped was Tesco and here's what we found there








Cost of unhealthy shop= £35.94










Cost of Slimming World shop= £74.35

This means it would cost you an extra £38.41 a week to eat healthily if you shopped in Tesco!


The third place we shopped was Sainsburys and this is what we found


Cost of unhealthy shop= £36.58


Cost of Slimming World shop= £78.61

This means it would cost you an extra £42.03 a week to eat healthily if you shopped at Sainsburys!


The final place we shopped was Morrisons and here are the results


Cost of unhealthy shop= £34.64


Cost of Slimming World shop= £75.10

This means it would cost you an extra £40.46 a week to eat healthily if you shopped at Morrisons!

So there you have it, it does cost a LOT more to eat healthily by shopping at the major supermarkets. However, I can assure you that it is still totally possible to eat healthily without breaking the bank at all" All you need to do is change where you shop! Places like Lidl and Aldi offer amazing value for money and you could find that by shopping at these places your food bill could literally half! Allan and I moved house a year ago and we have a Lidl literally at the bottom of the road. We had never shopped there before but thought we would try it one day as it was so close and we were gobsmacked when the total flashed up on the screen at the end, it was SO much cheaper than our usual shop and we have never looked back! I know a few people who are put off by Aldi and Lidl  because they seem to think that because its so cheap the quality must be bad, but I can assure you it's not, the quality is fantastic. In fact, the quality of their fresh food is usually better than the more expensive supermarkets, we have also found that their fruit and veg lasts a lot longer too! We don't shop anywhere else now apart from maybe the odd online shop if we are poorly or cant get to Lidl for whatever reason, but this is very rare.

Another thing that puts some people off Lidl and Aldi is the fact that they cant online shop and they don't deliver to your door. But just think, that hour walking around the supermarket and packing and unpacking your bags is that little bit more exercise which all helps to boost your weight loss! I actually enjoy going to Lidl as I like to walk around as see what bargains they have on offer that week (yes, i'm sad lol)!.

It was over £70 to do a healthy shop in Asda, Tesco, Sainsburys and Morrisons, and that was just for your evening meals, without lunches or breakfasts, add those and it would be well over £100!

Allan and I get a whole weeks Slimming World shop in Lidl, including breakfasts, lunches, evening meals, snacks, drinks and food for Rosie for under £65 a week, most weeks it is less that £60! BARGAIN OR WHAT??!! I know lots of people who shop in Aldi and they are also very impressed by the prices and quality they have to offer too!

        

So there you have it, you can eat healthily without spending a fortune! This post just goes to show, its not what you buy, but where you buy it that is expensive!

Don't be afraid to try Lidl or Aldi, I can promise you, you wont be disappointed!

Simple Slimming Suppers- Monday 16th March 2015

        
       

       
Hey everyone, Welcome to this weeks Simple Slimming Suppers!

This week I have lost another 1 1/2lbs. Again, although any loss is good and I went down a jeans size (yay!) , this isn't as much as I was hoping for, therefore has left me feeling a little bit disappointed. I have done slimming world before and found that after about 2 months my weight loss started to slow down, I think this is the case with the majority of long term diets if I'm honest. I have been reading ways to speed up weight loss and I have noticed that lots of other Slimming Works members found that they could speed their weight loss up by having a mainly vegetarian diet, i.e lots of fresh fruit and veg and meat substitutes such as Linda McCartney and Quorn. I know a lot of people turn their noses up at Quorn (some before they've even tried it!) but I have to admit I quite like it (not too keen on the cold Quorn but the stuff you cook is actually rather yummy!)! They have lots of Syn free or very low Syn products and I already eat their sausages, chicken nuggets (only 1/2 a Syn each and feel like a real treat!) and have tried their burgers and they are all lovely!. As Quorn products were on offer in Asda this week I decided to stock up and I am going to mainly stick to non-meat meals this week to see if it helps speed my weight loss up. Allan won't eat Quorn so on the nights he is home (weekends) I will use lean meat in our meals as normal. Most people I have seen online that have been helped by cutting down on meat still eat meat 2/3 nights a week so here's hoping that it helps me as it has them! I shall let you know next week!

       
   

Now, this week instead of my usual recipe of the week I have decided to do something slightly different and share with you what I eat on a normal on-plan day! If you are considering starting slimming world hopefully this will help you to see that just because you are in a diet, your food can still be yummy and enjoyable! So here is what I ate today!

Breakfast-



Today I had lots of chopped up fruit (apple, banana and blueberries) topped with lots of fat free Greek Yogurt, a sprinkle of sweetener and a crumbled Chocolate and Fudge Alpen Light Bar. Yum!

Total Syns for Breakfast = 0 syns and 1/2 healthy extra B for Alpen Bar (you are allowed 2 of these a day as your healthy extra B!)

Lunch-




Today I had a Jacket Potato with Fat Free Pineapple Cottage Cheese and 4 slices of Quorn Turkey, followed by a Muller Light Fruitopolis Yogurt (my new favourite yogurt, they are lovely!) plus a pint of Sugar Free Squash!

Total Syns For Lunch- 0.5 syns for cottage cheese and 0.5 syns for yogurt = 1 Syn

Dinner-



Today I had a Peppered Quorn Steak with Mashed Carrot and Swede (made by mashing diced cooked carrot and swede, a tsp of margarine, a dash of milk from my Healthy Extra A and salt and pepper together) , Mushy Peas and a Tbsp of Low Sugar and Salt Tomato Ketchup. This was so filling! I followed this a while later with another Muller Light Fruitopolis Yogurt.

Total Syns For Dinner- 1 1/2 syns for tsp margarine, 1/2 Syn for tbsp ketchup and 1/2 syn for yogurt = 2 1/2 syns

Snacks-

Today for snacks I have had lots of fruit, some Low Fat Supernoodles, a normal Muller Light Yogurt and my other Alpen Light bar from my Healthy Extra B.

Total Syns For Snacks- Zero. All my snack foods were Syn free today :)

Total Syns Used Today Out Of My 15 Syn Allowance-

3 1/2 Syns! Great day Syns wise whilst still eating lots of yummy food!


So there you have it! That was what I ate today! Hopefully I have inspired someone to try Slimming World if they were thinking twice about it! Do remember that if you don't want to/don't like to eat Quorn then everything I have eaten today can be made using meat instead!

Simple Slimming Suppers!- Monday 23rd February 2015

        

Hello everyone! Welcome to this weeks "Simple Slimming Suppers"
This week has been a great week for us weight-loss wise! Allan and I have both lost 3 lbs each and Colin has lost another 1 lb! we have been firmly back on plan since getting back from our mini-break away and our hard work has payed off! We have had a few treats over the week but have made sure we have stayed within our Syn allowance for the week and it's worked. That's why I love slimming world, you can lose weight whilst still being able to treat yourself now and again. The one thing I've struggled with when dieting in the past is that I have got fed up so quickly of eating the same "rabbit food" type meals every single day. However, with slimming world there are so many different recipes to try that you never have to worry about eating the same thing day in day out, you never have to get bored of it. I look at it as more of a healthy lifestyle than a diet.

Also this week, we have tried the new Slimming World meals range in Iceland. All the new meals are completely free on Slimming World and can either be cooked in the oven or in the microwave if you're in a rush. The meals come in portions for one so are ideal for when Allan is away at work and I'm on my own. I in no way intend to start living on frozen meals every day as I love cooking too much, but they really are ideal for days when I just can't be bothered (let's face it, we all have those days!). The meal range includes Meatballs and Pasta in a Spicy Tomato Sauce, Singapore Noodles, Chicken Pizziola, Roasted Vegetable Pasta, Chicken Tikka Masala, Sweet Potato Curry, Hot-Smoked Salmon Farfalle and Beef in Red Onion Gravy with Vegetable crush, Slimming world have also brought out Syn Free Sausages in bags of 6 and Syn Free Meatballs in bags of 16. So far we have tried the Meatballs and Pasta in a Spicy Tomato Sauce, Singapore Noodles and the Sausages, all which were very yummy! I have a few more in the freezer to try this week and I hope they are as impressive, I'm sure they will be from reviews I have read so far! As I say, I don't think they should become a reason to be lazy and have them every day, as I believe a healthy lifestyle is also about teaching yourself to cook and learning what is good for you, but they are very handy for days where you maybe feel a bit under the weather or just can't be bothered yet don't want to fall off plan.



Now for this weeks "Recipe Of The Week". This week I have decided to share a recipe for "Slimming World Pulled Pork". This recipe feels very naughty and indulgent, however, it's completely free so no guilt here! Yay!

Ingredients-

1 joint of gammon or pork, all visible fat removed (we had gammon this time, but I'd actually recommend pork as the gammon was a bit too salty for my taste, allan however loved it)
1 red onion
3/4 carton of Passatta
4 tbsp Sweetener
3 tbsp Balsamic Vinegar
3 tbsp Worcester Sauce
1 tsp Mild Chilli Powder
Salt and Pepper to taste

Method-
To make the BBQ Style sauce-

1) Finely chop your Red Onion and fry in a saucepan with Fry Light until Onions begin to soften.

2) Once Onions have started to soften, add the tsp of Chilli Powder and stir through the Onions for a couple of minutes.

3) Add the Pasatta, Sweetener, Balsamic Vinegar, Worcester Sauce and Salt and Pepper and give it a good stir to mix all the ingredients together.

4) Turn the heat to low and let sauce simmer for 10 minutes. The sauce should have thickened slightly and darkened after 10 minutes.

5) Put the joint of Gammon or Pork into a slow cooker, pour sauce over the meat and cook on low all day until you're ready to eat!



6) Once you're ready to eat, shred the meat with 2 forks then give it a mix so that all the sauce is mixed through the shredded meat. The meat should just fall apart with the forks.





7) Serve your Pulled Pork with a side of your choice! We had ours in a bap (healthy extra B) with Slimming World Coleslaw and Slimming World Chips. Yum Yum!

Simple Slimming Suppers!- Monday 16th February 2015

        

Hello everyone! Welcome to this weeks Simple Slimming Suppers!!

Ask you know there was no weight loss updates on last weeks post as Allan and I were away so weren't able to weigh ourselves. Therefore, it has been 2 weeks today since we weighed ourselves. I am very pleased to say that even though we had a lovely little mini holiday where we just ate what we wanted, neither of us put any weight on, in fact we have both lost weight!! Yay! I have lost 4lbs since last time and Allan has lost 1lb! Not as much as we would usually like to lose in 2 weeks, however, considering we have cheated quite a few times during these 2 weeks we are very pleased with our losses! This means that I have now lost 1stone 4 1/2 lbs in total and Allan has lost 11lbs. Not bad at all in my opinion!! I have been feeling under the weather the past few days and must admit I have found it hard to stay on plan, it's very hard to stick to a diet when all you want to do is eat comfort food and drink hot chocolate!! But hey hey never mind! Think thin Anna, think thin!!

Now.. For this weeks recipe of the week. This week I thought I would share my recipe for Syn Free Bolognese. This is one of my favourite meals and I have it every week, usually more than once because there is always plenty leftover!! This recipe should feed 3-4 people so if there's only one or two of you then just bung the leftovers in a Tupperware and pop it in the freezer. I do this every week, it's great for when allan is away working and I'm on my own as I was getting into the habit of not having "proper" meals when he was away. This way I can have a "proper meal" when I'm on my own but without having to cook from scratch every night.

Syn Free Bolognese




Ingredients-

500g lean minced beef
2x 400g tins/cartons of chopped tomatoes (I had ones with added garlic and onion but plain is fine!)
200g Passatta
1 chopped onion
1 punnet of chopped mushrooms 
2 crushed garlic cloves 
1 stock cube
tbsps of tomato purée
1 tbsp balsamic vinegar
1 tbsp Worcester sauce
1 tsp ground cinnamon
2 tsps dried chilli flakes (we like hot food, if you don't, just add 1 tsp)
1 heaped tbsp dried mixed herbs
1 tsp salt (or to your taste)
Pinch of black pepper
Fry light

Method-

1) heat a large saucepan and spray with fry light.

2) add your minced beef to pan and fry until browned.



3) once your minced beef is browned, add your onion, mushrooms and crushed garlic and stir into the minced beef until onions and mushrooms begin to soften.




4) once your onions and mushrooms have started to soften, crumble in your stock cube, add the 2 tbsps of tomato purée and stir for a few minutes.



4) add your 2 cartons of chopped tomatoes, 200g of Passatta and stir through for a few minutes.

5) then, add your remaining ingredients one by one, stirring well in between adding each ingredient.





6) allow your Bolognese to simmer on a low heat for 15 minutes.

7) after 15 minutes, you should have a lovely Bolognese sauce that looks something like this..




Yum yum!! Remember, this is only my recipe for it, if you taste it and you feel like it needs more garlic, salt, pepper etc just add it to your taste! This Bolognese sauce is great served the traditional way with spaghetti, in a bowl with a side salad, in a jacket potato, spooned over slimming world chips, even with rice!! It can also really easily be made into a chilli con carne by adding some kidney beans and the right spices (there are lots of slimming world chilli recipes online!). I have just made this Bolognese and we will be having ours for tea tonight with pasta and topped with 40g of reduced fat grated cheese each (our healthy extra A's!). I must say it smells delicious!!

Simple Slimming Suppers!- Monday 2nd Feb 2015

        


Hello Everyone!, Welcome to this weeks Simple Slimming Suppers!

This week was my 4th weigh in since starting the Slimming World diet. This week I lost either 2lbs or 3lbs, I can't say for definite because the scales keep alternating between the 2!! That will teach me to keep getting back on the scales to double check! I'm very guilty of becoming a bit obsessed with the scales and weighing myself every day, more than once! This week my goal is to not get on the scales until my weigh day, then when I do, accept the first number that shows up! So, because I'm not sure whether I lost 2lbs or 3lbs I will go in the middle and say I have lost 2 1/2lbs. Making that 1st 1/2lb in 4 weeks. Pretty pleased with that!! I do believe that I could have possibly lost a bit more this week however I haven't been feeling too well so haven't done as much excercise as I could have and we also had an indian takeaway on Saturday night because I wasn't in the mood for cooking. I chose the best option off the menu and had grilled tandoori meat with salad and boiled rice, however I'm sure it had hidden syns! But hey we all have to have a treat once in a while and it could have been worse! I'm just happy I lost my stone! 

This week, Colin lost 2lbs making that 5lbs in the 4 weeks. He told me he was surprised to have lost anything because he hadn't been as strict with his diet this week however, the extra excercise must be working and he ended up losing more this week than he did last week! Well done Colin!

The biggest achievement this week however goes to Allan! This week he lost 5lbs!! That has doubled his weight loss now making it -10lbs in 4 weeks! Awesome! The main thing that Allan was struggling with was sticking to his diet when he is in work. He works away from home during the week so would just go out every day and buy a sandwich and a packet of crisps or something similar for his lunch every day. However, for the past few weeks he has been making sure he takes a mug shot for lunch each day (these are great for him as they're a free food on slimming world and they don't need to be kept chilled so won't go off in the car when he is doing his long journeys) and he has also been taking a huge Tupperware full of apples, bananas and satsumas so that he has something to snack on during the day in work. This has obviously worked very well and along with his very active week in work it has meant that he has had a wonderful loss this week! He is very proud of himself and rightly so, however, not as proud as I am of him!! Go Allan!

Now for my recipe of the week. As I mentioned earlier, I haven't been feeling 100% this week and last night we just wanted some nice comfort food, but without having to feel guilty after! So I searched the Internet and came across this fantastic little recipe, KFC Style Chicken with Chips and Coleslaw, Slimming World Style! There were a few different recipes so I just tweaked them to our taste, and I have to say it turned out absolutely beautiful! It is a little bit more time consuming than some recipes but it is well worth it! It felt very naughty and you felt like you were really having a naughty treat. It was definitely a treat, but certainly not a naughty one!

Slimming World Friendly Coleslaw!

Ingredients-

1 bag of coleslaw mix (sachet of full fat Mayo that is included removed)
2 tbsp Hellmanns Lighter Than Light Mayonnaise (1 syn)
4 tbsp Fat Free Natural Yogurt
Pinch of Salt
Pinch of Pepper


                             

Method-

1) Empty the bag of coleslaw mix into a large mixing bowl and remove the sachet of full fat mayonnaise that is included.

2) Add the 2 tbsps of Lighter Than Light Mayo, 4 tbsps of Fat Free Natural Yogurt, Salt and Pepper.


       

3) Mix all the ingredients together until the coleslaw veg is completely covered with the Mayo and Yogurt. If it is too dry just add some more Mayo (1 syn per tablespoon) or Yogurt until it is to your liking.


       
   


Slimming World KFC Style Chicken!

Ingredients-

1 packet of Chicken Goujons (or 2 chicken breasts cut into strips)
2 Slices of Wholemeal Bread (Healthy Extra B or 4 syns each, we used it as our healthy extras)
1 teaspoon of Dried Oregano
1 1/2 teaspoons of Garlic Salt
1/2 teaspoon of Dried Ginger
1/2 teaspoon of Dried Chilli Flakes
Pinch of Black Pepper
1 Egg


       


Method

1) Turn your oven on to 200. Tear bread into strips and put into a food processor along with all the spices.


                                 

2) Blend the bread and spices until they turn to breadcrumbs and empty the breadcrumbs out into a shallow dish.


       

3) Beat the egg in a bowl. Take a chicken goujon and coat it in the egg mixture.


       

4) Take the chicken goujon out of the egg mixture and transfer it to the dish of breadcrumbs, coat the goujon with breadcrumbs until you can no longer see any chicken showing through. Place goujon into an ovenproof dish.


                          

5) Repeat this process with all the goujons.


       

6) Put the chicken into the oven. Cook for 20 minutes. Take chicken out of the oven, turn over then put back into oven for a further 15-20 minutes, or until fully cooked and crispy.

7) Take the chicken out of the oven and serve immediately with the coleslaw and Slimming World chips (you can find the recipe for these in my first Simple Slimming Suppers post). Sit back, relax and enjoy!


       

We both thoroughly enjoyed this recipe and I will definitely be making it again! It felt really indulgent and was seriously filling, but without feeling any guilt afterwards!!

Simple Slimming Suppers will be slightly different next week. There will be no weigh in updates as Allan and I are going away so will not be here to weigh ourselves. I will however, still do a recipe post in advance which Colin will publish for me on Monday. It will all be back to normal the week after and I will update you on our weight then (hopefully losses if we haven't been too naughty on our little trip away! Lol).

Simple Slimming Suppers! Monday 26th January 2015

Hello everyone, Anna here!

Welcome to this weeks Simple Slimming Suppers. This week was my 3rd weigh in since starting the Slimming World diet. This week I lost 3lbs, making my total weight loss 13lbs in 3 weeks! I'm chuffed to bits with how well the diet is working! I won't lie, when I first saw -3lbs on the scales i was slightly gutted that I was so close to a stone and hadn't quite managed it, but then I soon snapped out of it and realised that 13lbs in 3 weeks is a real achievement and I am actually now very proud of myself!! Here's hoping I get that stone next week!!

This week I have done a lot more excercise, I have been jogging and running up and down the stairs. Wow am I achy, but it's so worth it when you see the results! 

From now on I will also be including Allan and Colin's weight loss journeys in these weekly posts. They are both trying to lose weight and feel that if they are in this post every week and know that you guys will all know if they dont stick to it, it will keep them going!

This week Allan lost 2lbs, making his total a 5lb loss in 3 weeks, he is doing very well and doesn't have that much to lose anyway. He has quite a physical job and gets excercise in work most days, and he is eating as healthily as he can when he is away at work and is eating the same slimming world meals as me when he is home. I am very proud of him!

This week Colin lost 1lb, making his loss -3lbs in total! He feels disappointed by this but I think any loss is a huge achievement! Colin is trying to speed up his weight loss by taking up lots more excercise and snacking less (I think snacking was everyone's downfall!). He has been doing lots more walking, going on the excercise bike on his days off and also spending some time on the wii fit. He's doing a super job!!

So now for my recipe of the week! It took me a while to pluck up the courage to make this dish as I thought it sounded a bit weird, but everyone on slimming world raves about it so I bit the bullet last night and made it. Well O.M.G am I glad I did! It was delicious and well worth making, don't be put off just because it sounds strange, you will love it!

Diet coke chicken!

Ingredients

1 tsp Mixed herbs
1 Onion
8 tbsp Passatta
2 cloves Garlic
Fry light
1 tbsp Worcester sauce
1 tbsp Dark soy sauce
200ml Chicken stock
1 packet of Diced chicken
1 Green pepper
1 Yellow pepper
330ml can diet coke
4tbsp Tomato purée
Bag of Sugar snap peas
1 Teaspoon chilli fakes (optional, we just like our food a bit spicy)
Rice


      

Method 


1) start by chopping the onions and peppers and crushing the garlic cloves.

   
 
2) spray a saucepan with fry light and fry the onion, peppers and garlic for about 5 mins or until slightly brown.

                  
    
3) add the mixed herbs, Passatta, Worcester sauce, soy sauce,stock, can of coke, tomato purée and chilli flakes, turn heat to medium, cover and let simmer for 12 mins.

                      


4) after 12 mins add sugar snap peas and let simmer for 10 more mins.

   


5) take the sauce off the heat, keep covered.

6) In a separate pan,  spray with fry light and stir fry chicken until almost cooked.

                          


7) add sauce and allow to simmer until chicken is fully cooked.

8) Meanwhile, cook some boil in the bag rice whilst the chicken is cooking.

                          


9) once rice and chicken are cooked through, serve and enjoy!
