Hello everyone! Welcome to this weeks Simple Slimming Suppers!
As I mentioned last week, this weeks Simple Slimming Suppers will be slightly different. There won't be any weight updates as Allan and I have been away from Sunday until tomorrow therefore we aren't able to weigh ourselves (this post has been written in advance). Although there are no weight updates i am able to say that during the week we stuck to our diet just like normal. I am not promising we have been as strict during our few nights away but I can assure you that we will not be going over the top with the junk food either, just a few treats here and there! We will be straight back strictly on plan on Wednesday and hopefully we will have either lost a bit of weight or at least maintained the weight we were before we came away! I am sure you will get a blog post soon all about what we got up to on our little getaway as a couple (very rare these days!)
Now for this weeks recipe! This week I have decided to share my recipe for Slimming World Mini Quiches. These are great to have either as part of a meal or as a snack. They are ideal for breakfast, lunch or dinner and there are plenty of things that will go with them to make a scrummy meal from chips to baked beans. They are very yummy and VERY easy to make. You can either eat them hot from the oven or they are also delicious cold as part of a packed lunch or a snack. They will keep in a Tupperware for 2 days in the fridge. This recipe is a great way to use any veg or leftover meat you have in the fridge that needs using up. This is just my recipe for them as this is what I had in my fridge this week! You can use any filling you like in them, just use whatever you fancy!!
Slimming World Mini Quiches (makes 12)
Ingredients-
6 mushrooms, chopped into small pieces
Half an onion, chopped into small pieces
6 cherry tomatoes, halved
3 cooked bacon medallions (or bacon rashers with fat cut off), chopped into small pieces
4 eggs
Salt
Pepper
Chilli flakes
Fry light
Method-
1) Preheat your oven to 200 and chop your vegetables and bacon.
2) Beat your eggs in a bowl and season with salt, pepper and chilli flakes to your taste.
3) Spray a muffin tin with Fry Light.
4) Divide the mushrooms, onion and bacon between the holes in the muffin tray.
5) Pour 5 tablespoons of the beaten egg in each hole over the onion, mushrooms and bacon (if you run out of egg just beat another one). You should be able to see the egg around the veg and bacon.
6) Top each one with a cherry tomato half.
7) Put the tray into the preheated oven and cook for 15 minutes.
8) Take out of the oven and they should look something like this..
..If they need a little bit longer just put back into the oven until they are nice and golden.
9) Either serve hot straight from the muffin tray or leave to completely cool then put into a Tupperware and keep in the fridge for up to 2 days. Easy peasy and very yummy!
